BBQ – Southern Style

Let me preface this category by first defining the term “BARBEQUE”. Barbeque is a method of cooking that has many regional definitions and variations. For the sake of simplicity, these recipes have been created and tested with “Southern BBQ” standards, indirect smoking with wood (oak, hickory, apple wood, etc.) or charcoal with a cooking surface temperature of 250 to 325 degrees. I will give the optimal temperatures in each recipe as the meat being cooked dictates. If you have a favorite way of barbequing, by all means, try your cooking method first. The important part of barbequing and smoking is in the preparation and seasoning of the protein first, then the temperature and cooking times.
