Gourmet Grilled Tomatoes

Love tomatoes but you've run out of ways to fix 'em? Try this great recipe with an Italian twist for an incredibly easy and awesome new way to enjoy your favorite red fruit! You can change up the ingredients a bit if you want a little variety in this recipe. |
Try using a different cheese such as Provolone, Swiss, Havarti, Gouda or even Cheddar instead of fresh Mozzarella. Or leave the cheese off all together if you're a purist and true tomato aficionado! Any way you try it, you can't go wrong grilling it with Lawhorn's!
INGREDIENTS
2-4-- large vine-ripe tomatoes, CHILLED (Beef Steak is my personal preference) Each tomato will yield two to three servings.
2ea.- fresh Garlic cloves (minced or pureed)
1 stick- Salted butter
1/2lb- 1/8" sliced FRESH Mozzarella cheese (1slice of cheese per slice of tomato)
1-2 TBS--Lawhorn's Signature Seasonings
6-8 leaves--Fresh Basil thinly sliced or chopped
METHOD:
Melt the butter and garlic together to make garlic butter. Do not let the garlic burn, gently "poach" the garlic in the butter for about 10 minutes. Save the remaining butter for next time. Core the tomatoes and slice them into about 1/2" slices. (Any thinner and they cook too quickly and fall apart) Brush the Garlic butter on both sides. Liberally sprinkle the Lawhorn's on both sides of the tomatoes.
Place on a HOT grill, (500° or hotter) and grill 1 minute. Flip the slices with a spatula and sprinkle the fresh Basil on each slice and then top it with the sliced cheese and cook for another minute or until the cheese is melted nicely. (Put the lid down on the grill if you have a lid. An aluminum pie tin or large pot lid will do if your grill does not have a lid.)
That's it, you're done! Now go enjoy this delicious new creation with a nice glass of Chardonnay or Pinot Grigio! Make a plate full for friends, eat them as appetizers or as a side dish with your meal. Enjoy!
