INGREDIENTS
4-6 center-cut pork chops or boneless pork loin chops, 1 to 1/12 inches thick
1-Liberal sprinkling, Lawhorn’s Signature Seasonings™
2-tbs clarified butter
½ cup “seasoned” all purpose flour (w/ Lawhorn's Signature Seasonings until you can see pepper specs)
DIRECTIONS
Pre-heat oven to 450°.
Liberally season both sides of the chops then dredge them in the seasoned flour. Heat butter on med-high heat in a non-stick sauté pan. Sauté chops until light brown on both sides. (1-2 minutes on each side). Do not let the butter get too hot as to start to smoke and burn. This will change the flavor of the butter to a brown nutty taste. If your chops are less than 1” thick, check for doneness, they may be already done. If they are thick, pop them in a hot oven for about 3 to 4 minutes.
They will begin to plump and be very juicy when you cut into them.

Variations: Season the chops almost like a rub, then pan-sear them without the flour for a zero carb alternative. This is just like “blackening” something. You may still need to finish in the oven the chops are thick.
You can also sauté them with onions in the pan, add some pork stock, then make great country pork gravy with the drippings right in the pan. Just add Lawhorn's Signature Seasonings to taste, and roux (mixture of flour and fat) to thicken! The chops may be simmered in the gravy if you so desire.
